Not Aloe but Agave 

Earlier, a local media published the news “Liu Xiaobo has proved cancer” as “Funny news”. It was really a shame. In Mainland we are never lack of funny news! 

For example, a mainland anchor performed how she ate “aloe” in front of the people during the live broadcast. Soon she felt discomfort and was then sent to hospital. It was found what she ate was not aloe but agave! 

In fact, agave does look like aloe and even cactus, but we all know the renowned spirits called tequila is actually made of the juice inside the ‘Pine’ of an agave. 

As early as AD 300, the local Indian civilization has been using agave to make wine called Pulque. In the 16th century, the Spaniards came and introduced the distillation technology, which led to the born of distilled spirits Mezcal. What being known as Tequila is actually one kind of Mezcal, whose raw material is confined to “blue agave” out of other 135 spices of agave. Produced in a specific area. 

So tequila is more premium and popular than Mezcal? Right now it still is, but Mezcal is coming up! Why? As it has much less restrictions on raw material, there are much more possibilities for the producers to explore. Tobaziche and Tepeztate Mezcal are some of the successful examples. 

不是蘆薈  是龍舌蘭

 

早前本港某大傳媒旗下派發之免費報紙,竟將劉曉波患癌的新聞放在「中國趣聞」的欄目,實在無耻兼弱智,其實在中國要找趣聞實在多的是。

 

譬如說,一名大陸主播在直播期間,在眾人面前表演吃「蘆薈」,她拿著大片的「蘆薈葉」大口大口咬起來,沒過多久卻感到不適,立即送院醫治,最後才發現他吃的不是「蘆薈」,而是龍舌蘭!

 

其實龍舌蘭外型的確看似蘆薈,也酷似仙人掌,但愛酒之人會知道Tequila酒,就是以龍舌蘭莖部的汁液為原料釀造的酒,而不是葉,而且必需經過多重處理,才可取其汁液。

 

早在西元三百年左右,當地印地安文明就有用龍舌蘭汁釀酒,稱為Pulque。

到16世紀西班牙人來到,引入了蒸餾技術,造出的蒸餾酒稱為Mezcal;至於我們所熟悉的Tequila,則必需以龍舌蘭136支中的其一種「藍色龍舌蘭」(Blue Agave)為原料,並且在特定地區範圍釀造。

 

這樣聽來Tequila一定比Mezcal更Premium更受歡迎。目前來說是對的,可是Mezcal卻有興起勢頭。想想看,Tequila只能用藍色龍舌蘭造,而Mezcal則包括其他135支不同的龍舌蘭,可能性不是更廣嗎?譬如說,Tobaziche、Tepeztate都是愈來愈受歡迎的Mezcal。
